Venison Butchery Classs | Intermediate for Hunters (26th April 2026)
Take your field-to-fork skills to the next level with our Intermediate Venison Butchery Class for Hunters at our professional butchery in Ellon, Aberdeenshire. Tailored specifically for those with prior hunting experience, this practical, hands-on course is designed to refine your technique, improve yield, and build confidence when working with venison meat.
The class runs from 9.30am to 3:30/ 4pm, with a 45 minute lunch break included – giving you time to recharge and connect with fellow hunters. Lunch is provided along with any required equipment.
The morning session focuses on efficiently breaking down a deer carcass into its primal cuts. Guided by our experienced course teacher, you’ll develop a deeper understanding of carcass structure, knife control, and best practices to maximise quality and minimise waste—skills essential for anyone processing their own game.
After lunch, the focus shifts to creating high-quality, ready-to-use venison products and then you’ll transform your cuts into a selection to take home, ensuring nothing goes to waste and everything is prepared to a professional standard. You will leave for home with a minimum of 8 Kg of venison, suitable for freezing.
