Discover the art of traditional venison butchery with our hands-on Beginner’s Venison Butchery Class at The Scottish Venison Company in Ellon, Aberdeenshire. Designed for complete beginners and food enthusiasts alike, this immersive one-day experience will guide you through the full journey from carcass to premium cuts and cooking recommendations.

The class runs from 9:30am to 3:30 / 4pm, with a relaxed 45 minute lunch break (included), giving you plenty of time to learn, practice, and enjoy the process.  All equipment will be provided.

Your day begins in our professional butchery, where you’ll be introduced to the fundamentals of carcass preparation. Under expert guidance, you’ll learn how to skin and break down a deer carcass into its primary cuts, gaining essential knife skills and a deeper understanding of venison structure.

After a well-earned lunch, the afternoon session focuses on transforming those cuts into delicious, ready-to-cook products. You’ll prepare a selection of venison items to take home, including steaks, diced venison, minced steak and handcrafted burgers—perfect for sharing with family and friends.  You’ll leave with a minimum of 8 Kg of fresh venison products prepared by yourself and suitable for freezing.
